There's so much that New California and Mediterranean cuisine have in common. The incredible scenic coastlines, the easy laid back lifestyle, but mostly it's our access to an abundance of fresh produce, dairy products and grass - fed, organic, sustainable ingredients.
As I was thinking about what recipe to offer today; I realized, hmmm...so many Mediterranean, Middle Eastern, Latin American and Asian dishes are overflowing with vegetables. Either as a a main course or side dish. It's all about the veggies.
